Resumen
To determine the characteristics, composition and carcass quality in hair sheep genotypes in feed lot, was used 22 Dorper x Pelibuey (DRxPB), 11 Pelibuey x Katahdin (PBxKT) and 12 Pelibuey (PB). The sheep received a diet for 42 d integral. At the end of this period, 11 DRxPB, 5 PBxKT and 6 PB were slaughtered. The sheep who continued in the trial received for 42 d more a diet. The results of the variables were analyzed using a randomized complete design. Among lambs PB and PB x KT, at 42 and 84 days of fattening no differences (P> 0.05) in HCW (18.22 and 21.48 kg), CYC (51.41 and 51.84%), TCY (54.21 and 56.63%), REA (9.65 and 9.87 cm2) and AWT (7.99 and 10.93 mm). PB lambs at 42 days showed lower value of BT (0.85 mm), and 84 days the value was similar between groups (2.32 mm). RPF was higher at 84 days in PB (3.82 vs. 2.31%). The lower value for EBW was recorded by PB lambs slaughtered at 42 days of fattening (32.13 vs. 33.98 kg). At 84 d feeding, the rate of bone was higher (P <0.05) in PBxKT (23.49%) than in DRxPB (22.56%) and PB (21.43%). The amount of disectable in DRxPB was higher at 84 d (14.33 vs.10.75%); same situation was observed in PB (14.09 vs. 13.26%). The brightness of the hybrid sheep meat was higher to PB (38.95 vs. 35.75). DL was similar between genotype, however, the value of WHC were lower in DRxPB. SWB was higher (P <0.02) in sheep PB (2.36 vs. 1.89 kg) for 84 d. We conclude that the days of fattening adjust according to genotype favor the optimization of the production process.
